What a week we had last week. With plenty of illness intermingled (strep throat, colds, sinus infection) we managed to participate in the science fair, district livestock judging contest, a field trip, orthodontist/dentist/two doctors appointments, a ladies' luncheon, the usual weekly ballet/piano/4-H stuff and a second birthday celebration for Sam so that he could have cake on his birthday (Wal-Mart cake though it was!).
Somehow enough laundry got done to get us through the week, but the meal plan did not go as planned.
I was so wiped out on Wednesday, that I ordered pizza from Pizza Hut. On Thursday, I was really not feeling well, so following the science fair awards ceremony, we picked up McDonald's. My sweet husband somehow read my mind on Friday, and after simply mentioning "tilapia" he took the bull by the horns and cooked the entire meal while I rested, then he did the dishes! Saturday....still not feeling well, though I worked for part of the day, but I felt well enough to throw the meatball bake together...so no grilling.
I am looking forward to a slightly less hectic, more healthy week. We have moved our pizza night to Thursday. Pizza is not a favorite of Dennis's, and since he has prior dinner plans on Thursday, and I have somewhere I need to be at 7 (ie., I need something simple to serve), we moved it to that night. Here's our plan for this week:
Monday - Chicken Scallopine (from The Pioneer Woman -- the whole family enjoys this dish), steamed broccoli
Tuesday - Baked salmon, steamed green beans, rice pilaf
Wednesday - Pot roast with carrots, celery and red potatoes, green salad, wheat rolls
Thursday - Pizza -- Marketside from Wal-Mart -- due to evening plans
Friday - Fish sticks, macaroni and cheese, English peas (this, at Rachael's request)
Saturday - Red Lobster (finally! Jack's choice for report card reward meal)
Also, Rachael and I are excited to make Hot Cross Buns on Good Friday. Have a blessed Holy Week!
