I'm a bit late in my planning this week after a busy weekend of 4-H and church activities, work and birthday parties with a strep throat diagnosis! We are worn out, but if I don't get my week planned, we will be in trouble. This week probably won't be super elaborate -- or experimental for that matter....we're lookin' at basic fare and recipes that I've made many times!
Monday - Breakfast for Dinner: Mickey Mouse Pancakes*, scrambled eggs, bacon, fruit
Tuesday - Spaghetti with meat sauce, steamed broccoli, garlic bread
Wednesday - Homemade pizza with Pioneer Woman's pizza crust recipe; this week: Cheese Pizza and Pepperoni/Canadian Bacon
Thursday - Layered Meatball Bake (I make this with turkey meatballs), Green Salad
Friday - Baked Tilapia, Steamed Carrots, Rice Pilaf
Saturday - Grilled Chicken Paillard (I use less red pepper...to keep it from being too spicy), Black Beans, Green Salad, Corn Bread
* There is no "recipe" for Mickey Mouse Pancakes -- I will do a post on these soon -- I use a basic pancake mix and we "dress them up" to look like a mouse (or at Christmas, like Santa!). The kids love them and they are a special treat!
