We had two celebrations for Rachael's 7th birthday so that Dennis's side of the family could sing "Happy Birthday" to her before they left town. For her actual birthday cake, which we had a couple of days after her birthday to accomodate my work schedule and the rain, I made Pioneer Woman's Red Velvet Cake from the cookbook. I came home and baked the cake over my lunch hour, then iced it that evening.
Instead of the cream cheese icing from the PW cookbook, I used my standard buttercream (since Rachael "hates cream cheese"). The flavor of the cake was delicious and it looked really pretty. The cake was a tad dry, and I am not sure if that was a function of the cake sitting out all afternoon waiting to be iced or if I was a little off in my measurements when mixing up the cake. I will definitely make it again.
That gouge in the icing on the front side of the cake is the work of a certain unnamed toddler cousin. I think they like icing! Here's what the inside of the cake looked like....the recipe calls for 1-2 oz. of red food coloring. I used 1 oz. which resulted in a bright red color.
Rachael and I also enjoyed a fun girls day of shopping with my sister Judith to celebrate both Rachael and Judith's birthday. We have had a busy, fun, productive summer full of swimming lessons, vacation bible school, birthdays and work, and we are looking forward to upcoming vacation time. Stay tuned....
